Instructions
- Heat the Oil: Warm the olive oil in a skillet over medium heat to prepare for cooking.
- Cook the Shrimp: Add the shrimp to the hot skillet and cook for 2–3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside to prevent overcooking.
- Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.
- Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional minute to release flavor.
- Simmer the Cream: Pour in the heavy cream and bring the mixture to a gentle simmer, allowing the sauce to slightly thicken.
- Incorporate Cheese and Seasonings: Stir in the grated Parmesan cheese, Italian seasoning, salt, and pepper until the cheese melts and the sauce is creamy.
- Add Spinach: Toss in the fresh spinach and cook until it wilts, blending its flavors into the sauce.
- Return Shrimp to Skillet: Place the cooked shrimp back into the skillet and cook for an additional 2 minutes to heat through and meld flavors.
- Serve Immediately: Dish out the Tuscan shrimp right away, ideal over pasta, rice, or crusty bread.
