Instructions
- Prepare the Dressing. In a small bowl, whisk together the lime juice, fish sauce, sugar, and chili flakes until the sugar is fully dissolved and the flavors are well combined.
- Combine Salad Ingredients. In a large bowl, add the shredded cooked chicken, thinly sliced cucumbers, red onion, and chopped fresh cilantro.
- Toss with Dressing. Pour the prepared dressing over the salad ingredients and toss everything thoroughly to ensure even coating of the dressing.
- Marinate. Allow the salad to sit for about 10 minutes, which helps the flavors to meld beautifully and the cucumbers to slightly absorb the dressing.
- Add Crunchy Topping and Serve. Just before serving, sprinkle the crushed roasted peanuts on top to add a delightful crunch and extra nutty flavor.
