Ingredients
For the Cranberry Filling:

- 2 tbsp cornstarch

- 1 tsp orange zest
- ½ cup orange juice

- 1 cup (125 g) all-purpose flour
- 2 tbsp granulated sugar
- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup (115 g) unsalted butter, cold and cubed
- ⅓ cup (80 ml) milk or heavy cream
- 1 tsp vanilla extract
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and grease a 9-inch baking dish to ensure the cobbler doesn’t stick.
- Cook Cranberry Filling: In a saucepan over medium heat, combine cranberries, both sugars, cornstarch, ground cinnamon, nutmeg, cloves, ginger, orange zest, and orange juice. Cook until the cranberries begin to burst and the mixture thickens, about 8–10 minutes. Pour this hot filling into the prepared baking dish.
- Make Cobbler Topping: In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold, cubed butter until the mixture looks like coarse crumbs. Then stir in the milk (or heavy cream) and vanilla extract just until combined; do not over-mix.
- Assemble Cobbler: Drop spoonfuls of the biscuit dough evenly over the cranberry filling. It’s fine if there are gaps; the fruit will bubble up through them during baking.
- Bake: Bake the cobbler in the preheated oven for 30–35 minutes, or until the topping is golden brown and the cranberry filling is bubbly.
- Cool and Serve: Allow the cobbler to cool slightly before serving it warm. For extra indulgence, serve with vanilla ice cream or whipped cream.
