Ingredients
For the Crepes:
- 1 cup flour
- 2 eggs
- 1 1/2 cups milk
- 1 tbsp melted butter
- 1/4 tsp salt
For the Filling:
- 2 eggs (scrambled)
- 1/2 cup cheese (such as cheddar or gruyere)
- 1/2 cup sautéed vegetables (spinach, mushrooms, peppers)
- Optional: cooked turkey or chicken (about 1/2 cup, diced)
Instructions
- Prepare the Batter: In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until the batter is smooth and free of lumps. Allow the batter to rest for 10 minutes to improve texture.
- Cook the Crepes: Heat a non-stick pan over medium heat. Pour a thin layer of batter into the pan, tilting it to evenly cover the surface. Cook for 1 to 2 minutes until the edges are lightly golden and the crepe can be lifted easily.
- Flip the Crepe: Carefully flip the crepe and cook the other side for an additional 1 to 2 minutes until lightly golden.
- Repeat: Remove the cooked crepe and set aside on a plate. Repeat the process with the remaining batter, stacking crepes as you go.
- Prepare the Filling: In a separate pan, scramble the eggs and sauté the vegetables until tender. Warm the optional cooked turkey or chicken if using.
- Assemble the Crepes: Lay a crepe flat and add a portion of scrambled eggs, cheese, and sautéed vegetables. Add cooked meat if desired. Fold or roll the crepe to enclose the filling.
- Serve: Serve the savory crepes warm as a satisfying breakfast or brunch dish.
Notes
- Letting the batter rest for 10 minutes improves the crepe texture and makes them more tender.
- Feel free to customize the filling with your favorite vegetables, cheeses, or proteins to suit your taste preferences.
- Use a well-seasoned non-stick pan to prevent sticking and achieve perfect crepes.
- If you prefer, crepes can be made ahead and reheated gently before filling and serving.
