Instructions
- Cook Potatoes: Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the diced potatoes, seasoning with salt and pepper, and cook until they become golden brown and tender, about 10-12 minutes, stirring occasionally to prevent sticking.
- Add Sausage: Once potatoes are nearly done, add the cooked sausage to the pan. Stir and cook together for about 5 minutes until sausage is heated through and flavors combine.
- Scramble Eggs: In a separate non-stick skillet, crack the 4 eggs and scramble them over medium-low heat until fully cooked but still soft and fluffy. Season with salt and pepper.
- Assemble Bowls: Divide the cooked potatoes and sausage mixture evenly into 4 bowls. Add the scrambled eggs on top of each bowl.
- Add Cheese and Serve: Sprinkle 1/2 cup shredded cheese evenly over the bowls while the contents are still warm, allowing the cheese to melt slightly. You can serve immediately or allow to cool before storing for meal prep.
