Ingredients
Blondie Batter
- 1/2 cup butter (melted)
- 3/4 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Add-ins
- 1/2 cup white chocolate chips
- 1/2 cup raspberries (fresh or frozen)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) and line a baking pan with parchment paper or grease it lightly to prevent sticking.
- Mix Wet Ingredients: In a mixing bowl, combine the melted butter and brown sugar, stirring until well blended and smooth.
- Add Egg and Vanilla: Incorporate the egg and vanilla extract into the butter mixture, mixing thoroughly until the batter is uniform.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to ensure even distribution.
- Mix Dry into Wet: Gradually add the flour mixture to the wet ingredients and gently stir until just combined, taking care not to overmix to keep the blondies soft.
- Fold in Add-ins: Carefully fold in the white chocolate chips and raspberries, ensuring they are evenly distributed throughout the batter.
- Prepare to Bake: Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
- Bake: Place the pan in the oven and bake for 20–25 minutes, or until the blondies are set and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool and Slice: Allow the blondies to cool completely in the pan before slicing into 9–12 squares for serving.
Notes
- Do not overmix the batter to maintain a soft and tender texture in the blondies.
- When using frozen raspberries, lightly thaw and drain them well to avoid excess moisture in the batter.
- Line your baking pan with parchment paper for easier removal and cleaner cutting.
