- 1/4 cup barberries or raisins
- 1/4 cup dried apricots, chopped
- 1/4 cup almonds or pistachios, sliced

- 1 tbsp sugar
- 1/2 tsp saffron, soaked in warm water
- 1/2 tsp cinnamon
- Salt to taste
Instructions
- Prepare the rice: Rinse the basmati rice thoroughly under cold water to remove excess starch. Soak the rice in water for 20 minutes to soften the grains and improve texture.
- Cook the rice: Drain the soaked rice and cook it in boiling salted water until tender but still firm, around 12-15 minutes. Drain and set aside.
- Sauté fruits and nuts: In a pan, melt the butter over medium heat. Add the dried barberries or raisins, chopped apricots, and sliced almonds or pistachios. Gently sauté them for a few minutes until fragrant and slightly softened.
- Add spices and sugar: Stir in the sugar, cinnamon, and the saffron infused water into the fruit and nut mixture. Cook together for another couple of minutes to allow the flavors to meld.
- Combine rice and mixture: Gently fold the cooked rice into the sautéed fruit and nut mixture, ensuring even distribution without breaking the grains.
- Steam to finish: Cover the pan and steam the combined rice and fruit mixture on low heat for 5-7 minutes. This step helps the flavors blend deeply and produces a fluffy texture.
- Serve: Fluff the rice once more gently and serve warm as a side or main dish to complement your meal.

- Adding a teaspoon of orange zest can enhance the aroma and add a fresh citrus note.
