Soft, buttery layers of bread coated in maple-cinnamon sugar and chopped pecans, baked until golden and drizzled with maple glaze. A stunning treat for breakfast, brunch, or holiday gatherings offering a perfect balance of sweet and nutty flavors in every pull-apart bite.

  • Total Time: 2 hours 40 minutes
  • Yield: 1 loaf (8–10 servings)

Ingredients

For the Dough:

  • 3 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 ¼ tsp active dry yeast (1 packet)
  • ½ tsp salt
  • ¾ cup warm milk (110°F)
  • ¼ cup unsalted butter, melted
  • 2 large eggs

For the Filling:

  • ½ cup unsalted butter, melted
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon
  • ½ cup chopped pecans
  • 2 tbsp pure maple syrup

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp pure maple syrup
  • 12 tbsp milk, as needed

Instructions

  1. Make the dough: In a large bowl, whisk together the flour, granulated sugar, active dry yeast, and salt. Add in warm milk, melted butter, and eggs, mixing until a dough forms. Knead the dough for 6–8 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise until doubled in size, approximately 1 hour.
  2. Prepare filling: In a medium bowl, combine melted butter, packed brown sugar, ground cinnamon, chopped pecans, and pure maple syrup. Mix until evenly blended to create a spreadable filling.
  3. Shape bread: Punch down the risen dough and roll it out on a lightly floured surface into a 12×20-inch rectangle. Spread the maple-pecan filling evenly over the dough. Cut the dough into strips, stack the strips, then cut the stacked strips into squares. Place the stacked squares upright in a greased loaf pan, arranging them snugly to maintain shape during baking.
  4. Second rise: Cover the loaf pan with a towel or plastic wrap and allow the dough to rise again for 30–40 minutes until puffy and nearly doubled.
  5. Bake: Preheat the oven to 350°F (175°C). Bake the loaf for 35–40 minutes, checking occasionally. If the top browns too quickly, tent the loaf loosely with foil to prevent over-browning while letting the bread fully bake.
  6. Glaze: While the bread is warm, whisk together powdered sugar, pure maple syrup, and milk to create a smooth glaze. Drizzle this maple glaze generously over the warm bread before serving to add sweetness and moisture.

Notes

  • Bread is best served warm so the layers pull apart easily.
  • For extra crunch, sprinkle more chopped pecans on top before baking.
  • This bread can be prepped ahead by assembling in the loaf pan, then refrigerating overnight. Bake fresh in the morning for best results.
