Ingredients
Main Ingredients
- 6 large tortillas
- 6 large eggs
- 1/4 cup milk
- 1 cup cooked sausage or bacon, chopped
- 1/2 cup diced bell peppers
- 1/4 cup chopped onion
- 1 cup shredded cheese (cheddar or Mexican blend recommended)
- Salt and pepper to taste
Instructions
- Cook Meat: Cook the sausage or bacon in a skillet over medium heat until fully cooked and browned. Remove from pan and set aside.
- Sauté Vegetables: In the same skillet, add diced bell peppers and chopped onions. Cook until softened, about 4-5 minutes.
- Scramble Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour into the skillet and scramble together with the sautéed vegetables until eggs are cooked through.
- Combine Filling: Mix the cooked sausage or bacon back into the egg and vegetable mixture, stirring to combine evenly.
- Assemble Burritos: Lay out the tortillas and evenly distribute the filling onto each one. Sprinkle shredded cheese over the filling, then roll up each tortilla tightly into a burrito shape.
- Wrap and Store: Wrap each burrito individually in foil or plastic wrap. Refrigerate if consuming within a few days, or freeze for longer storage.
- Reheat and Serve: When ready to eat, reheat burritos in the microwave for 1-2 minutes or in an oven preheated to 350°F (175°C) for 15-20 minutes until warmed through.
