Ingredients

For the Choux Pastry:

  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs

For the Filling:

  • 1 cup pastry cream or vanilla pudding

For the Glaze:

  • 1 cup chocolate chips
  • 2 tbsp heavy cream

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to ensure it’s hot enough for the éclairs to puff properly.
  2. Prepare Choux Dough: In a saucepan, heat the water, milk, and butter together until it reaches a rolling boil.
  3. Add Flour: Quickly add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the pan.
  4. Incorporate Eggs: Remove the pan from heat and let the dough cool slightly. Beat in eggs one at a time, fully incorporating each before adding the next, until a smooth, pipeable dough forms.
  5. Pipe Éclairs: Transfer the dough into a piping bag fitted with a large round tip. Pipe 10–12 elongated éclair shapes onto a baking tray lined with parchment paper.
  6. Bake: Bake in the preheated oven for 20 to 25 minutes until the éclairs are puffed, golden brown, and crisp on the outside. Avoid opening the oven door early to prevent collapsing.
  7. Cool: Remove éclairs from oven and allow them to cool completely on a wire rack before filling.
  8. Fill: Use a piping bag to fill the cooled éclairs with 1 cup of pastry cream or vanilla pudding through a small hole made in the side or bottom of each éclair.
  9. Prepare Glaze: Melt chocolate chips with 2 tablespoons of heavy cream in a double boiler or microwave, stirring until smooth and glossy.
  10. Glaze and Decorate: Dip the tops of the filled éclairs into the chocolate glaze or spoon it over them evenly. Decorate with piped icing to resemble love letters for a romantic presentation.

Notes

  • Do not open the oven door during the first 15 minutes of baking to prevent éclairs from collapsing.
