  • 4 boneless, skinless chicken breasts

  • 1 cup Brussels sprouts, halved
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • ½ cup low-sodium chicken broth

Instructions

  1. Season & Sear Chicken: Season the chicken breasts on both sides with salt and black pepper. Heat olive oil over medium-high heat in a large skillet. Place the chicken in the skillet and sear each side for 4 to 5 minutes until golden brown. Remove the chicken from the skillet and set aside.
  2. Cook Vegetables: In the same skillet, add butter, diced sweet potato, sliced red onion, and halved Brussels sprouts. Sauté the vegetables for 6 to 8 minutes until they begin to soften and lightly caramelize.
  3. Add Apples & Glaze: Stir in the sliced apples, maple syrup, Dijon mustard, fresh or dried thyme, and rosemary. Cook for an additional 2 to 3 minutes, allowing the glaze to evenly coat the vegetables and apples and develop flavor.
  4. Combine & Simmer: Return the seared chicken breasts to the skillet with the vegetables and apples. Pour in the low-sodium chicken broth and cover the skillet. Reduce the heat to low and simmer for 10 minutes or until the chicken is cooked through and the vegetables are tender.
  5. Serve: Spoon the flavorful maple-Dijon glaze over the chicken and vegetables. Optionally garnish with additional fresh herbs before serving. Serve warm as a comforting and wholesome fall dinner.
