Ingredients
Chicken
- 4 chicken breasts or thighs
Marinade
- 2 tablespoons olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Topping and Garnish
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- Prepare the marinade: In a bowl, thoroughly mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- Marinate the chicken: Place the chicken breasts or thighs in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to infuse.
- Heat the cooking surface: Preheat a grill or a large pan over medium heat until hot and ready for cooking.
- Cook the chicken: Remove the chicken from the marinade and cook it on the grill or pan for about 8-10 minutes per side, or until fully cooked through and golden brown on the outside.
- Add feta cheese: While the chicken is still hot, sprinkle the crumbled feta cheese evenly over the top so it slightly softens and melds with the chicken.
- Garnish and serve: Garnish with freshly chopped parsley and serve immediately, pairing well with rice, potatoes, or a fresh salad.
Notes
- Marinate the chicken longer, up to several hours or overnight, for deeper flavor penetration.
- Serve alongside rice, roasted potatoes, or a crisp salad to complete the meal.
- Incorporate olives or cherry tomatoes into the dish for added Mediterranean flair.
