Ingredients
Soup Ingredients
- 2 cups broccoli florets
- 1 small onion, chopped
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 1 cup chicken or vegetable broth
- 1 1/2 cups shredded cheddar cheese
- Salt and black pepper to taste
Instructions
- Melt Butter and Cook Onion: Melt the butter in a pot over medium heat. Add the chopped onion and cook until it becomes soft and translucent, about 4-5 minutes.
- Add Flour: Stir in the flour and cook for 1 minute to form a roux, which will help thicken the soup.
- Add Liquids: Gradually whisk in the milk and chicken or vegetable broth, stirring constantly until the mixture is smooth and starts to thicken.
- Add Broccoli and Simmer: Add the broccoli florets to the pot and let the soup gently simmer until the broccoli is tender, about 10-12 minutes.
- Incorporate Cheese: Stir in the shredded cheddar cheese until it melts completely, giving the soup a creamy texture.
- Blend for Texture (Optional): For a smoother texture, slightly blend part or all of the soup using an immersion blender or by carefully transferring to a blender, then return it to the pot.
- Season and Serve: Season with salt and freshly ground black pepper to taste. Serve the soup warm for the best flavor experience.
Notes
- Do not boil the soup after adding the cheese to prevent it from separating.
- Use sharp cheddar cheese for a stronger, more pronounced flavor.
- For added color and sweetness, consider adding chopped carrots.
