Instructions
- Prepare Noodles: Cook the ramen noodles according to the package instructions. Once cooked, drain well and set aside to prevent overcooking during stir-frying.
- Sauté Garlic: Heat oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté for about 30 seconds or until fragrant, being careful not to burn it.
- Cook Minced Pork: Add the minced pork to the pan and cook, stirring frequently, until fully browned and no pink remains, approximately 5-7 minutes.
- Add Seasonings: Stir in the curry powder, soy sauce, and fish sauce evenly over the pork. Cook for an additional 1-2 minutes to let the flavors meld.
- Cook Vegetables: Add the mixed vegetables to the pan and stir-fry for 2-3 minutes, until they are tender-crisp and heated through.
- Combine Noodles and Sauce: Add the cooked ramen noodles and 2 tablespoons of water to the pan. Toss everything together thoroughly, ensuring the noodles are well coated with the curry sauce and ingredients are evenly mixed.
- Final Cook and Serve: Continue cooking and tossing the mixture for another 2-3 minutes until heated through and slightly caramelized. Garnish with chopped green onions and serve hot.
Notes
- The fish sauce adds a depth of umami flavor but can be omitted for a milder taste or dietary preferences.
- Top with a fried egg for added richness and protein.
- Feel free to use whatever vegetables you have on hand, such as snap peas, corn, or broccoli.
