Ingredients
Protein and Vegetables
- 1 lb sausage
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can white beans, drained
Liquids and Seasonings
- 1 tbsp olive oil
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tsp Italian seasoning
- Salt and pepper to taste
Garnish
- Fresh parsley for garnish
Instructions
- Brown the Sausage: Heat the olive oil in a large pot over medium heat. Add the sausage and cook until it is browned all over, breaking it into pieces as it cooks for even browning and flavor release.
- Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the sausage. Sauté for about 3 to 5 minutes until the onion is translucent and the garlic is fragrant, stirring frequently to prevent burning.
- Add Beans and Broth: Stir in the drained white beans and pour in the chicken broth. Mix everything together well to combine all the flavors.
- Simmer the Soup: Bring the soup to a gentle simmer. Allow it to cook uncovered for 15 minutes so the flavors meld and the broth slightly reduces.
- Finish with Cream and Seasoning: Pour in the heavy cream and sprinkle the Italian seasoning over the soup. Stir well and simmer for an additional 5 minutes to thicken the soup slightly and marry the flavors.
- Season and Serve: Taste the soup and adjust seasoning with salt and pepper as needed. Ladle into bowls, garnish with fresh parsley, and serve warm for a comforting meal.
Notes
- Use spicy sausage to add extra flavor and a subtle kick to the soup.
- For a lighter option, substitute heavy cream with milk.
- Add fresh spinach or kale during the last few minutes of simmering to boost the nutritional value and add color.
