Ingredients

Mushroom Sauce

  • 2 cups cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan
  • 1 tsp fresh thyme

Instructions

  1. Season and Sear Chicken: Season the chicken breasts generously with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken on both sides until golden brown, about 4-5 minutes per side. Remove chicken from the pan and set aside.
  2. Sauté Mushrooms and Garlic: In the same skillet, reduce heat to medium and add the sliced cremini mushrooms. Cook until they begin to release their moisture and become tender, about 5 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Add Liquids and Simmer: Pour in the chicken broth, heavy cream, and grated Parmesan cheese. Stir well to combine and let the sauce simmer gently until it thickens, approximately 5-7 minutes. Stir occasionally to prevent burning and encourage even thickening.
  4. Return Chicken and Finish Cooking: Place the seared chicken breasts back into the skillet, spooning the creamy mushroom sauce over them. Add fresh thyme and cook everything together for another 5 minutes, allowing the chicken to cook through and absorb the flavors.
