Instructions
- Cook Noodles: Bring a pot of water to a boil and cook the noodles according to the package instructions, usually about 5-7 minutes for soba or wheat noodles. Once cooked, drain and immediately rinse them thoroughly under cold running water to stop the cooking process and cool the noodles completely. Drain well and set aside.
- Prepare Dressing: In a bowl, combine the soy sauce, rice vinegar, sugar, sesame oil, and chili oil if using. Stir well until the sugar is dissolved and the dressing is evenly mixed.
- Toss Noodles with Dressing: Place the cooled noodles in a large mixing bowl and pour the dressing over them. Toss thoroughly to ensure every noodle strand is coated with the flavorful dressing.
- Add Vegetables: Add the julienned cucumber and carrot to the dressed noodles. Gently mix to incorporate the crunchy vegetables evenly throughout the noodles, adding refreshing texture.
- Garnish and Serve: Sprinkle the sesame seeds on top for a nutty garnish. For best flavor, chill the prepared noodles in the refrigerator for 20-30 minutes before serving. Optionally add boiled egg or cooked chicken for additional protein to make it a more substantial meal.
