Ingredients
Caramel
- 1/2 cup sugar
Custard
- 2 cups milk
- 3 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat your oven to 325°F (160°C) to ensure it is ready to bake the custard evenly.
- Make the caramel: Heat 1/2 cup sugar in a saucepan over medium heat, stirring occasionally until the sugar melts completely and transforms into a golden caramel color. Be careful not to burn it.
- Prepare the caramel base: Quickly pour the hot caramel into the bottom of a baking dish or evenly divide it into ramekins, tilting them to coat the base before the caramel hardens.
- Mix eggs and sugar: In a separate bowl, whisk together the 3 large eggs and 1/2 cup sugar until the mixture is smooth and slightly frothy.
- Warm the milk: Gently warm the 2 cups of milk (do not boil) to just above room temperature, then slowly whisk it into the egg and sugar mixture, combining thoroughly but carefully to avoid scrambling the eggs.
- Add vanilla: Stir in 1 teaspoon of vanilla extract to infuse the custard with a fragrant note.
- Assemble custard and caramel: Pour the custard mixture gently over the set caramel in the baking dish or ramekins.
- Prepare water bath: Place the baking dish or ramekins inside a larger pan and pour in hot water until it reaches halfway up the sides of the custard containers. This water bath method ensures gentle, even cooking.
- Bake the custard: Bake in the preheated oven for 40–45 minutes, or until the custard is set but still slightly wobbly in the center.
- Cool and chill: Remove from the oven, let the custard cool to room temperature, then refrigerate for at least 2 hours to fully set and enhance flavors before serving.
Notes
- Run a knife around the edge of the custard before inverting onto a serving plate to release it cleanly.
- Avoid overbaking to maintain a smooth and creamy texture; the custard should still jiggle slightly when done.
- This dessert is best served chilled for optimal flavor and texture.
