Ingredients
For the Blueberry Filling
- 4 cups blueberries
- 1/2 cup sugar
- 1 tbsp lemon juice
For the Biscuit Topping
- 1 cup flour
- 1 cup milk
- 1/2 cup butter, melted
- 1 cup sugar
- 2 tsp baking powder
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to ensure it reaches the optimal temperature for baking the cobbler.
- Prepare the blueberry filling: In a mixing bowl, combine the blueberries with 1/2 cup sugar and 1 tablespoon lemon juice. Stir gently to coat the berries evenly and enhance their natural tartness.
- Make the biscuit batter: In a separate bowl, mix the flour, remaining 1 cup sugar, and baking powder. Add the milk and melted butter and stir until just combined to form a batter.
- Assemble the cobbler: Pour the biscuit batter into a greased baking dish. Evenly spread the blueberry mixture on top of the batter without stirring them together.
- Bake the cobbler: Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the topping is golden brown and a toothpick inserted into the biscuit layer comes out clean.
- Cool and serve: Allow the cobbler to cool slightly before serving to let the filling thicken and flavors meld.
Notes
- For a thicker filling, you can add 1 tablespoon of cornstarch to the blueberry mixture before baking.
- Serve warm with vanilla ice cream or whipped cream for an extra special treat.
- The biscuit topping can be substituted with a crumble topping for a different texture.
- Leftovers can be refrigerated for up to 3 days and gently reheated before serving.
