Ingredients
Wet Ingredients
- 1 ripe banana, mashed
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon butter or oil for cooking
Dry Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Mash the banana: In a bowl, mash the ripe banana thoroughly until it reaches a smooth consistency, which will add natural sweetness and moisture to the batter.
- Mix wet ingredients: Add milk, egg, and vanilla extract to the mashed banana and mix well until all the wet ingredients are fully incorporated.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, sugar, baking powder, and salt to evenly distribute the leavening agent and flavorings.
- Make the batter: Gradually add the dry ingredient mixture into the wet ingredients, stirring gently until a smooth batter forms without overmixing to keep the pancakes fluffy.
- Heat the skillet: Preheat a skillet or frying pan over medium heat and lightly grease it with butter or oil to prevent sticking and add flavor.
- Cook the pancakes: Pour small portions of batter onto the skillet to form pancakes. Cook for about 2–3 minutes, until bubbles appear on the surface and edges look set.
- Flip and finish cooking: Flip the pancakes carefully and cook for another 1–2 minutes, or until the other side is golden brown and cooked through.
- Serve warm: Remove from the skillet and serve the banana pancakes immediately while warm with your choice of syrup, fresh fruit, or yogurt.
Notes
- Add chocolate chips or blueberries to the batter for tasty variations.
- Use whole wheat flour instead of all-purpose flour for a healthier, fiber-rich option.
- Serve with classic maple syrup, honey, or fresh fruit toppings for extra flavor.
