Instructions

- Add Liquids and Sweetener: Stir in the milk, vanilla extract, and sugar (if using) until well incorporated.
- Combine Dry Ingredients: Gradually add the flour and baking powder to the wet mixture, stirring gently until the batter is smooth and free of lumps.
- Fold in Add-Ins: Carefully fold in chocolate chips or berries if you choose to include them, distributing evenly throughout the batter.
- Fill Muffin Pan: Spoon the batter into the prepared mini muffin pan, filling each cup about three-quarters full.
- Bake: Place the pan in the preheated oven and bake for 12 to 15 minutes, or until the pancake bites are set and lightly golden on top.
- Cool and Serve: Remove the pancake bites from the oven and allow them to cool slightly in the pan before removing and serving.
