- 1 lb Italian sausage
- 4 cups potatoes, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale, chopped

Instructions
- Brown the Sausage: In a large pot over medium heat, cook the Italian sausage until browned and fully cooked. Once browned, drain the excess fat carefully to keep the soup lighter.
- Simmer Potatoes and Broth: Return the pot to the stove and add the chicken broth and sliced potatoes. Bring the mixture to a gentle simmer and cook for about 15 minutes or until the potatoes are tender.
- Add Cream and Kale: Stir in the heavy cream and chopped kale. Continue heating the soup until the kale softens, which should take a few minutes. Season with salt and pepper to taste. Serve warm.
Notes
- For a bit of spice, add crushed red pepper flakes when adding the cream and kale.
- For a lighter soup, substitute half-and-half in place of heavy cream.
