These Zucchini and Sweet Potato Tots are a healthy, crispy snack or side dish made with simple ingredients like zucchini, sweet potato, and coconut flour. Packed with flavor and nutrients, they’re perfect for a guilt-free treat. Baked to golden perfection, these tots are a hit for both kids and adults!

  • Total Time: 40-45 minutes
  • Yield: 20-24 tots (depending on size)

Ingredients

2 grated zucchinis (roughly 250g)

1 cup mashed sweet potatoes (250g when cooked)

1 teaspoon garlic powder

½ teaspoon sea salt

½ teaspoon ground black pepper

2 tablespoons coconut flour

Instructions

Step 1: Prepare Ingredients and Oven

Preheat your oven to 160°C (350°F).

Line a baking tray with baking paper to prevent sticking and for easy cleanup later.

Grate the zucchinis, then use your hands to squeeze out as much moisture as possible. This step is crucial to achieve crispy tots.

Step 2: Mix the Ingredients

In a large bowl, combine the prepared zucchini with mashed sweet potatoes, garlic powder, sea salt, and black pepper.

Add the coconut flour to the mixture and stir until well combined, ensuring even distribution of ingredients.

Step 3: Form and Arrange the Tots

Take tablespoon-sized portions of the mixture and form them into tot shapes using your hands.

Place each tot onto the prepared baking tray, leaving a little space between each one for even baking and crisping.

Step 4: Bake the Tots

Place the tray in the preheated oven and bake the tots for about 30-35 minutes, or until golden brown on the outside. Keep an eye on them as they bake to ensure they are cooked through.

Step 5: Serve and Enjoy

Once baked, remove from the oven and let cool slightly before serving.

Serve warm with your favorite dipping sauce, such as ranch or ketchup, for an extra flavor boost.

Notes

Be sure to squeeze out as much moisture as possible from the zucchini to prevent soggy tots.

You can use any type of dipping sauce you prefer, but a tangy sauce like ranch or a creamy dip works best.

These tots are best served fresh, but you can store leftovers in an airtight container for up to 2 days and reheat in the oven for a crispy texture.
