Ingredients
For the Mochi Dough:
1 cup mochiko (sweet rice flour)
½ cup sugar (adjust to taste)
1 cup water
A pinch of salt
For the Peach Filling:
3–4 ripe peaches (medium-sized, peeled and pitted)
For Dusting:
Cornstarch or potato starch (for dusting)
Optional:
1 tablespoon honey or maple syrup (for extra sweetness)
Instructions
Prepare the Peaches:
Peel and pit the peaches, then slice them into halves or quarters based on the size of the peaches and how you want to wrap them in the dough.
Make the Mochi Dough:
In a medium saucepan, combine the mochiko, sugar, and a pinch of salt. Gradually add water and stir until the mixture is smooth and lump-free.
Place the saucepan over medium heat, stirring constantly. The mixture will thicken, becoming translucent and stretchy. This should take about 10-15 minutes.
Shape the Mochi:
Dust a clean surface with cornstarch or potato starch to prevent the dough from sticking.
Once the dough has cooled enough to handle, divide it into 8 equal portions. Flatten each portion into a disc.
Place a peach half in the center of each disc and gently wrap the dough around the peach, sealing it completely.
Chill the Mochi:
Dust each mochi ball with more cornstarch or potato starch to prevent sticking.
Place the finished peach mochi in the refrigerator for at least 30 minutes to firm up and chill.
Serve:
Once chilled, the Whole Peach Mochi (Soft & Chewy) is ready to be served. Enjoy the sweet, chewy texture along with the juicy peach inside!
Notes
Ripe Peaches: Use ripe peaches for the best sweetness and juiciness. If fresh peaches aren’t available, you can use canned peaches, but be sure to drain them thoroughly.
Substitutions: You can replace peaches with other fruits such as mango, strawberries, or blueberries for a different fruity twist.
Storage: Store the peach mochi in an airtight container in the refrigerator for up to 3 days. You can also freeze them for up to 1 month. To freeze, place the mochis on a baking sheet in a single layer and freeze until firm, then transfer to an airtight container or freezer bag.
