Instructions

- Add seasoning and simmer: Stir in the taco seasoning and 1/2 cup water, then let the mixture simmer for 2 to 3 minutes, allowing the flavors to meld.
- Combine ingredients: In a large bowl, add the cooked beef mixture, salsa (or enchilada sauce), rinsed black beans, and frozen corn. Mix thoroughly.
- Add biscuit dough: Cut the refrigerated biscuit dough into quarters and stir into the beef and vegetable mixture until all pieces are coated.
- Assemble casserole: Pour the combined mix into the prepared baking dish, spreading it out evenly. Sprinkle the shredded Mexican blend cheese on top.
- Bake: Place the casserole in the oven and bake uncovered for 25 to 30 minutes, until the biscuit dough is cooked through in the center and the cheese is melted and bubbly.
- Rest and serve: Let the bake rest for 5 minutes to set up properly. Serve warm with your choice of toppings like sour cream, shredded lettuce, diced tomatoes, jalapeños, and fresh cilantro.
