Ingredients
Main Ingredients
- 2 sweet potatoes, cubed
- 1 onion, diced
- 1 bell pepper, diced
- 1 tbsp olive oil
- ½ tsp paprika
- ½ tsp garlic powder
- Salt & pepper, to taste
Optional Toppings
- Cooked sausage
- Fried eggs
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a skillet over medium heat to prepare for sautéing.
- Cook sweet potatoes: Add the cubed sweet potatoes to the skillet and cook for 8 to 10 minutes, stirring occasionally, until they become softened and begin to crisp on the outside.
- Add vegetables and seasoning: Stir in the diced onion and bell pepper along with ½ teaspoon each of paprika and garlic powder. Season with salt and pepper to taste. Cook the mixture until the vegetables are crisp-tender, about 5 minutes more.
- Finish and serve: Optionally, top the hash with cooked sausage or fried eggs before serving to add protein and extra flavor. Enjoy warm as a satisfying breakfast or brunch dish.
Notes
- For variety, substitute the sausage with bacon or chorizo for a different savory dimension.
- This hash works perfectly as a main dish for a skillet brunch, pairing well with toast or fresh greens.
