Ingredients
Strawberry Swirl
- 1½ cups fresh or frozen strawberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
Parfaits
- 2 cups vanilla or plain Greek yogurt
- 1 cup granola
- Fresh strawberry slices, for topping
Instructions
- Prepare the strawberry sauce: In a small saucepan, combine the strawberries, honey (or maple syrup), and lemon juice. Cook over medium heat for 5 to 7 minutes until the strawberries soften and release their juices.
- Blend or mash the sauce: Once cooked, mash the strawberries lightly with a fork or blend them for a smoother consistency. Allow the sauce to cool to room temperature.
- Layer the parfait: In serving glasses, begin by adding a layer of yogurt, followed by a spoonful of the cooled strawberry swirl.
- Add granola: Sprinkle a layer of granola over the strawberry sauce layer to add crunch.
- Repeat layering: Continue layering yogurt, strawberry swirl, and granola until the glasses are filled, leaving room at the top.
- Top with fresh strawberries: Garnish each parfait with fresh strawberry slices for a vibrant finish.
- Serve or chill: Serve the parfaits immediately to enjoy the granola’s crunchiness or chill them until ready to serve for a refreshing dessert.
Notes
- For convenience, use store-bought strawberry compote instead of making the sauce from scratch.
- Dairy-free yogurt can be used to make the parfait vegan-friendly.
- Assemble the parfaits just before serving to maintain the granola’s crunch.
- The strawberry swirl sauce can be stored in the refrigerator for up to 5 days.
