Ingredients
2 tablespoons olive oil
3 cloves garlic, minced
1 pound cremini mushrooms, sliced
5 cups fresh spinach, washed and dried
Salt, to taste
Freshly ground black pepper, to taste
1 tablespoon lemon juice
1 tablespoon soy sauce (optional)
2 tablespoons chopped fresh parsley (optional)
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until golden brown.
Season with salt and freshly ground black pepper.
Add the fresh spinach and gently toss to combine with the mushrooms. Cook for another 2–3 minutes until the spinach is wilted.
Drizzle lemon juice over the mixture and, if using, add soy sauce. Toss everything once more and remove from heat.
Garnish with chopped fresh parsley before serving, if desired.
