  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil: Place a pot over medium heat and add the olive oil, allowing it to warm up for a minute.
  2. Sauté onion and garlic: Add the chopped onion and minced garlic to the pot. Cook, stirring occasionally, until the onion is soft and fragrant, about 3-5 minutes.
  3. Add white beans and broth: Pour in the drained and rinsed white beans along with the vegetable broth. Increase the heat slightly and bring the mixture to a gentle simmer.
  4. Season the soup: Stir in the Italian seasoning, and season with salt and pepper to taste. Let the soup simmer for about 10 minutes to meld the flavors together.
  5. Add the spinach: Stir in the fresh spinach leaves and cook just until they are wilted, about 2-3 minutes.
  6. Serve: Ladle the soup into bowls and optionally top with grated parmesan cheese for extra flavor. Serve hot and enjoy your wholesome soup.
