Instructions
- Brown the sausage: Heat olive oil in a large pot over medium heat. Add the sliced spicy sausage and cook until browned on all sides, releasing flavorful fats into the pot.
- Sauté aromatics: Add chopped onion and minced garlic to the pot with the sausage. Cook, stirring frequently, until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes.
- Add liquids and spices: Stir in the diced tomatoes, white beans, chicken broth, paprika, and chili flakes. Mix well to combine all ingredients evenly.
- Simmer the stew: Bring the mixture to a boil, then reduce heat to low. Cover the pot and let the stew simmer gently for 25 to 30 minutes to develop deep, harmonious flavors.
- Season and serve: Taste and adjust seasoning by adding salt and pepper as needed. Serve the spicy sausage and white bean stew warm, optionally accompanied by crusty bread or a fresh salad.
