A bold and flavorful stew combining spicy sausage, creamy white beans, and aromatic herbs for a satisfying and hearty meal perfect for any season.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Meat

  • 400g spicy sausage (sliced)

Vegetables and Aromatics

  • 1 onion (chopped)
  • 2 cloves garlic (minced)

Beans and Tomatoes

  • 1 can white beans (drained and rinsed)
  • 1 can diced tomatoes

Liquids and Oils

  • 2 cups chicken broth
  • 1 tbsp olive oil

Spices and Seasoning

  • 1 tsp paprika
  • 1/2 tsp chili flakes
  • Salt and pepper to taste

Instructions

  1. Brown the sausage: Heat olive oil in a large pot over medium heat. Add the sliced spicy sausage and cook until browned on all sides, releasing flavorful fats into the pot.
  2. Sauté aromatics: Add chopped onion and minced garlic to the pot with the sausage. Cook, stirring frequently, until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes.
  3. Add liquids and spices: Stir in the diced tomatoes, white beans, chicken broth, paprika, and chili flakes. Mix well to combine all ingredients evenly.
  4. Simmer the stew: Bring the mixture to a boil, then reduce heat to low. Cover the pot and let the stew simmer gently for 25 to 30 minutes to develop deep, harmonious flavors.
  5. Season and serve: Taste and adjust seasoning by adding salt and pepper as needed. Serve the spicy sausage and white bean stew warm, optionally accompanied by crusty bread or a fresh salad.

Notes

  • Add spinach or kale during the last 5 minutes of simmering for extra nutrition and color.
  • Adjust the level of chili flakes to increase or decrease the spiciness according to your taste preference.
  • Serve with crusty bread or over cooked rice for a more filling meal.
  • Can be made ahead and reheated; flavors meld wonderfully the next day.
