Soup Base
- 2 tablespoons butter

Instructions
- Melt butter: In a large pot over medium heat, melt the butter until it’s fully liquefied and starting to foam slightly, providing a flavorful base for the soup.
- Sauté aromatics: Add the chopped onion to the pot and cook until softened and translucent, about 4-5 minutes, then stir in the minced garlic and cook for an additional 1 minute to release its aroma.
- Add potatoes and seasonings: Stir in the diced potatoes, chicken broth, Cajun seasoning, and smoked paprika, mixing well to ensure the potatoes are evenly coated with the spices.
- Simmer soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15–20 minutes, or until the potatoes are tender when pierced with a fork.
- Blend soup: For a creamy texture, blend part of the soup using an immersion blender directly in the pot or by transferring half to a blender. Alternatively, slightly mash the potatoes with a spoon to thicken the soup without fully pureeing.
- Finish with cream and cheese: Stir in the heavy cream and shredded cheddar cheese (if using) until fully incorporated and heated through, enriching the soup’s texture and flavor.
- Season and serve: Taste the soup and adjust salt and pepper as needed. Garnish with chopped green onions before serving to add a fresh, crisp bite.
Notes
- For an extra layer of smoky flavor, add cooked andouille sausage or your favorite smoked sausage when sautéing the onions.
- Adjust the amount of Cajun seasoning depending on your preferred spice level. Start with less if you are sensitive to heat.
