Ingredients

Dry Ingredients

  • ¼ tsp ground cloves
  • ¼ tsp ground ginger

Wet Ingredients

  • 1 cup mashed cooked sweet potato (about 1 medium)
  • ½ cup vegetable oil (or melted butter)
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk (or buttermilk)

Optional Add-ins

  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it and lining it with parchment paper to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. This ensures the spices are evenly distributed.
  3. Combine wet ingredients: In a large bowl, whisk the mashed sweet potato, vegetable oil (or melted butter), brown sugar, granulated sugar, eggs, vanilla extract, and milk until the mixture is smooth and well blended.
  4. Incorporate dry into wet: Gently fold the dry ingredient mixture into the wet ingredients until just combined. Be careful not to overmix, as this can make the bread tough.
  5. Add nuts: Stir in the chopped pecans or walnuts if you are using them for added texture and flavor.
  6. Prepare for baking: Pour the batter into the prepared loaf pan and smooth the top with a spatula to ensure even baking.
  7. Bake: Place the pan in the preheated oven and bake for 55–65 minutes. Check doneness by inserting a toothpick in the center; it should come out clean when done.
  8. Cool: Allow the bread to cool in the pan for 10 minutes to set, then transfer to a wire rack to cool completely before slicing and serving.
