Ingredients
Dry Ingredients
- 2 cups rolled oats
- 1/2 cup almonds (chopped)
- 1/2 cup walnuts
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Wet Ingredients
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil (melted)
- 1/2 tsp vanilla extract
Additional Ingredients
- 1/2 cup dried fruit (raisins or cranberries)
Instructions
- Preheat the oven: Set your oven to 170°C (340°F) to prepare for baking your granola mix evenly.
- Mix dry ingredients: In a large bowl, combine the rolled oats, chopped almonds, walnuts, cinnamon, and nutmeg, ensuring spices are evenly distributed.
- Prepare wet mixture: In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract until smooth and well combined.
- Combine wet and dry: Pour the wet mixture over the dry ingredients, stirring thoroughly so every oat and nut piece is coated with the spiced syrup.
- Spread on baking sheet: Evenly distribute the granola mixture on a baking sheet lined with parchment paper to prevent sticking and promote even cooking.
- Bake: Place the baking sheet in the oven and bake for 20 to 25 minutes. Stir the granola halfway through to ensure even browning and prevent burning.
- Cool and add dried fruit: Remove the granola from the oven and allow it to cool completely on the baking sheet. Once cool, mix in the dried fruit of your choice.
Notes
- Store the granola in an airtight container to keep it fresh for up to 2 weeks.
- For added variation, consider mixing in coconut flakes or seeds such as pumpkin or sunflower seeds.
- Make sure to stir halfway during baking to prevent burning and achieve even toasting.
