Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to roast the chickpeas to a crispy perfection.
- Dry Chickpeas: Pat the drained and rinsed chickpeas dry thoroughly with a clean towel to remove excess moisture, which is key for achieving maximum crunchiness.
- Toss with Oil and Spices: In a bowl, toss the dried chickpeas with olive oil, smoked paprika, garlic powder, cumin, cayenne pepper (if using), and salt, making sure each chickpea is evenly coated with the seasoning mixture.
- Roast Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet and roast in the preheated oven for 25 to 30 minutes, shaking the pan halfway through cooking to ensure even crisping on all sides.
- Optional Extra Crunch: For an extra crunchy texture, after turning off the oven, leave the chickpeas inside for an additional 10 minutes to dry further without burning.
