Ingredients
Beef Mixture
- 1 lb ground beef (80/20 recommended)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Tortillas & Cooking Fat
- 8 small flour tortillas (street-size)
- 1 tablespoon olive oil or butter
Toppings
- 4 slices American or cheddar cheese, halved
- Shredded lettuce (to taste)
- Diced tomatoes (to taste)
- Sliced pickles (to taste)
- Diced onions (to taste)
Burger Sauce
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 tablespoon pickle relish
- ½ teaspoon paprika
Instructions
- Prepare the beef mixture: In a mixing bowl, combine ground beef with salt, black pepper, garlic powder, and onion powder. Mix gently until just combined, avoiding overworking the meat for tender results.
- Portion the beef: Divide the seasoned beef into 8 equal portions for consistent taco sizes.
- Form beef on tortillas: Take one portion and press it thinly and evenly onto one side of a small flour tortilla, creating a thin beef layer.
- Heat skillet or griddle: Preheat a large skillet or griddle over medium-high heat and add olive oil or butter to prevent sticking and add flavor.
- Cook the tacos: Place the tortillas beef-side down on the hot skillet. Cook for 2–3 minutes, pressing firmly to ensure the beef crisps and caramelizes nicely.
- Flip and melt cheese: Carefully flip the tortillas and cook the other side for 1–2 minutes. Immediately add the halved cheese slices to the beef side and allow them to melt.
- Add toppings and serve: Remove the tacos from heat. Top the cheesy beef with shredded lettuce, diced tomatoes, sliced pickles, diced onions, and a generous spoonful of homemade burger sauce.
- Fold and enjoy: Fold the tacos and serve immediately while hot and juicy for the best taste and texture.
Notes
- Use high-fat ground beef (80/20) for juicy, crispy edges and flavor.
- Cook tacos in batches to avoid overcrowding the pan, which can prevent proper browning.
- Corn tortillas are an option but may crack due to the pressing; use flour tortillas for best flexibility.
- Serve with fries, chips, or onion rings to complete the meal.
- Best enjoyed fresh off the skillet to maintain crispiness and melty cheese.
