Ingredients
Egg Mixture
- 3 large eggs
- 1 tablespoon milk or water
- Salt, to taste
- Black pepper, to taste
Vegetables and Cheese
- 1 cup fresh spinach, chopped
- ¼ cup crumbled feta cheese
- Optional: diced onion, cherry tomatoes, or herbs
Cooking Fat
- 1 tablespoon olive oil or butter
Instructions
- Whisk Eggs: In a bowl, whisk the eggs with milk, salt, and pepper until the mixture is smooth and well combined.
- Heat Pan: Place a nonstick skillet over medium heat and warm the olive oil or butter until melted and hot.
- Sauté Vegetables: Add the chopped spinach and diced onion if using, sautéing for 30 to 60 seconds until the spinach is wilted but still vibrant.
- Pour Egg Mixture: Pour the whisked eggs into the skillet, tilting the pan to evenly spread the mixture across the surface.
- Cook Omelette Base: Let the eggs cook undisturbed for 2 to 3 minutes, until the edges start to set and the bottom is lightly golden.
- Add Feta: Sprinkle the crumbled feta cheese evenly over one half of the omelette while the top is still slightly runny.
- Fold Omelette: Gently fold the omelette in half over the cheese and cook for another 1 to 2 minutes, allowing the eggs to fully set and cheese to soften.
- Serve: Slide the omelette onto a plate immediately and enjoy hot for the best flavor and texture.
Notes
- Avoid overcooking to keep the omelette soft and fluffy.
- Use baby spinach for a milder spinach flavor if preferred.
- Feta cheese can be swapped with goat cheese or shredded mozzarella for a different taste.
- Serve alongside toast, fresh fruit, or a light salad for a complete meal.
