- 1/2 lb breakfast sausage or Italian sausage

- 1 tablespoon water

Instructions
- Preheat the Oven: Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Prepare the Puff Pastry: On a floured surface, roll out the thawed puff pastry slightly to smooth it out and make it easier to work with.
- Cut Pastry Strips: Cut the pastry into strips wide enough to wrap around the sausage comfortably.
- Assemble Bites: Lay sausage along each pastry strip and roll the pastry tightly to enclose the sausage completely.
- Cut into Bites: Slice the rolled sausage and pastry into bite-sized pieces and place them seam-side down on the prepared baking sheet.
- Apply Egg Wash: Whisk together the egg and water, then brush this mixture evenly over the tops of the pastry bites to help them brown beautifully. Optionally, sprinkle lightly with black pepper.
- Bake: Place the baking sheet in the oven and bake for 18–22 minutes, or until the puff pastry is puffed up and golden brown.
- Cool and Serve: Remove the bites from the oven and allow them to cool slightly before serving. Serve warm, optionally with mustard, honey mustard, or shredded cheese.

- For a softer filling, use pre-cooked sausage; raw sausage results in a firmer bite.
