Ingredients
Sausage
- 1 pound breakfast sausage
Hashbrowns
- 1 (20–24 oz) bag frozen hashbrowns, thawed
Egg Mixture
- 8 large eggs
- 1 cup milk
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Cheese
- 2 cups shredded cheddar cheese
- ½ cup shredded mozzarella or Monterey Jack cheese
Other
- 1 tablespoon butter or cooking spray (for greasing the dish)
Instructions
- Preheat and Prepare Dish: Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray to prevent sticking.
- Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart as it cooks. Drain excess grease to avoid greasiness in the casserole.
- Layer Hashbrowns: Spread the thawed hashbrowns evenly in the prepared baking dish, forming the base layer of the casserole.
- Add Sausage and Cheese: Sprinkle the cooked sausage evenly over the hashbrowns, then add the shredded cheddar and mozzarella (or Monterey Jack) cheeses on top, distributing them evenly.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until combined and smooth.
- Pour Egg Mixture: Pour the egg mixture evenly over the casserole layers, ensuring it seeps through all the layers.
- Bake the Casserole: Bake uncovered at 375°F (190°C) for 40–45 minutes, until the center is set and the top is lightly golden and bubbly.
- Rest and Serve: Allow the casserole to rest for 5–10 minutes after baking to cool slightly and set further before slicing and serving.
Notes
- You can substitute turkey sausage or chicken sausage for a leaner option.
- Add diced bell peppers or onions to the sausage when cooking for extra flavor and veggies.
- This casserole can be assembled the night before, covered, and refrigerated until ready to bake.
- Leftovers store well in the refrigerator for up to 4 days and can be reheated easily.
