Ingredients
Chicken
- 1 tbsp olive oil
- 4 chicken breasts
- Salt & pepper, to taste
Sauce
- 1 cup apple cider
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tsp fresh rosemary, finely chopped
Instructions
- Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook each side until golden brown, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- Prepare the Sauce: In the same skillet, add the apple cider, Dijon mustard, honey, and fresh rosemary. Stir to combine and bring the mixture to a gentle simmer. Let it cook for about 5 minutes to reduce slightly and develop flavor.
- Glaze the Chicken: Return the seared chicken breasts to the skillet, spooning the sauce over them. Reduce the heat to medium-low and cook for an additional 10-15 minutes, turning occasionally, until the chicken is cooked through and the sauce has thickened to a glaze.
Notes
- Pair this dish with mashed sweet potatoes for a comforting, fall-inspired meal.
- Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
- Fresh rosemary can be substituted with dried rosemary, reduce quantity to 1/2 teaspoon.
