Ingredients
1 cup fresh pineapple chunks
1 Tbsp granulated sugar (or simple syrup)
8–10 fresh mint leaves
1 oz fresh lime juice (about 1 lime)
2 oz coconut water (or coconut milk for creamier version)
2–3 oz soda water or sparkling water
Ice cubes
Pineapple wedge and mint sprig, for garnish
Instructions
In a sturdy glass or cocktail shaker, muddle pineapple chunks, sugar, and mint leaves until pineapple is crushed and mint is fragrant.
Add lime juice and coconut water. Fill shaker or glass halfway with ice and shake or stir gently.
Strain mixture into a highball glass filled with fresh ice.
Top with soda water, gently stir to combine.
Garnish with a pineapple wedge and mint sprig. Serve immediately and enjoy this tropical delight!
