Ingredients

12 oz (340 g) pasta of choice (e.g., penne or rotini)

2 tablespoons olive oil

2 large yellow onions, thinly sliced

3 cloves garlic, minced

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

1 cup grated Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley for garnish (optional)

Instructions

Heat olive oil in a large pot over medium heat.

Add sliced onions and cook for about 10 minutes, stirring occasionally, until caramelized and golden.

Stir in the garlic and cook for 1–2 minutes until fragrant.

Pour in the vegetable broth, thyme, salt, and pepper. Bring to a boil.

Add the pasta, stir, reduce heat to a simmer, and cover. Cook for 10–12 minutes, or until pasta is al dente.

Remove from heat and stir in Gruyère and Parmesan until melted and creamy.

Serve warm, garnished with parsley if desired.
