- 1 lb Italian sausage links (mild or hot)

- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced

- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp red pepper flakes (optional)
- ½ cup crushed tomatoes (or tomato sauce)

Instructions
- Heat the oil: Heat olive oil in a large skillet over medium-high heat to prepare for browning the sausages.
- Brown the sausages: Add Italian sausages to the skillet and cook, turning occasionally, until browned on all sides, about 5–6 minutes. Remove sausages from the pan and set aside.
- Sauté the vegetables: Using the same pan, add sliced onions and bell peppers. Cook for about 5 minutes until they soften and begin to caramelize.
- Add aromatics and herbs: Stir in minced garlic, dried oregano, dried basil, and red pepper flakes; cook for 1 minute until fragrant.
- Add tomatoes and season: Pour in crushed tomatoes, season with salt and black pepper, and stir well to combine all ingredients.
- Simmer with sausages: Return the browned sausages to the pan. Cover and let everything simmer for 15–20 minutes until sausages are fully cooked and flavors meld.
- Garnish and serve: Sprinkle fresh parsley on top before serving. Enjoy with crusty bread, pasta, or rice as desired.
