A quick and flavorful one-pan meal featuring Italian sausage, colorful bell peppers, onions, and seasonings. Perfect for busy weeknights, meal prep, or serving with crusty bread or pasta.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Meat

  • 1 lb Italian sausage links (mild or hot)

Vegetables

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced

Pantry Items & Seasonings

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • ½ cup crushed tomatoes (or tomato sauce)
  • Salt and black pepper, to taste

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium-high heat to prepare for browning the sausages.
  2. Brown the sausages: Add Italian sausages to the skillet and cook, turning occasionally, until browned on all sides, about 5–6 minutes. Remove sausages from the pan and set aside.
  3. Sauté the vegetables: Using the same pan, add sliced onions and bell peppers. Cook for about 5 minutes until they soften and begin to caramelize.
  4. Add aromatics and herbs: Stir in minced garlic, dried oregano, dried basil, and red pepper flakes; cook for 1 minute until fragrant.
  5. Add tomatoes and season: Pour in crushed tomatoes, season with salt and black pepper, and stir well to combine all ingredients.
  6. Simmer with sausages: Return the browned sausages to the pan. Cover and let everything simmer for 15–20 minutes until sausages are fully cooked and flavors meld.
  7. Garnish and serve: Sprinkle fresh parsley on top before serving. Enjoy with crusty bread, pasta, or rice as desired.

Notes

  • Serve over pasta, rice, or with crusty Italian bread.
  • Swap in chicken or turkey sausage for a lighter option.
  • Make ahead: Store in the fridge up to 4 days; flavors deepen overnight.
