4.3 from 37 reviews

Traditional Norwegian waffles, known as vafler, are soft, tender, and lightly sweet with a cake-like texture. Unlike crispy Belgian waffles, these waffles are meant to be enjoyed warm and folded, often topped with butter, jam, sour cream, or brown cheese, making them a delightful breakfast or dessert option.

  • Total Time: 30 minutes
  • Yield: 8–10 waffles

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ tsp ground cardamom (optional, very traditional)

Wet Ingredients

  • 2 cups milk
  • 2 large eggs
  • ½ cup melted butter, slightly cooled
  • 1 tsp vanilla extract

Instructions

  1. Preheat the waffle iron. Preheat your waffle iron, ideally one that is heart-shaped to maintain the traditional Norwegian look.
  2. Mix dry ingredients. In a large bowl, whisk together the flour, baking powder, sugar, salt, and ground cardamom if using, ensuring they are well combined.
  3. Mix wet ingredients. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients. Pour the wet ingredients into the dry ingredients and mix gently just until the batter is smooth. Avoid overmixing to maintain the light texture.
  5. Prepare the waffle iron. Lightly grease the waffle iron with butter or oil if necessary to prevent sticking.
  6. Cook the waffles. Pour batter into the preheated waffle iron and cook for about 3 to 5 minutes, or until the waffles are lightly golden and soft in texture.
  7. Serve warm. Serve the waffles warm, folded, with your choice of toppings such as butter, jam, sour cream, or traditional brown cheese.

Notes

  • Norwegian waffles are intentionally soft and cake-like rather than crispy.
  • Allowing the batter to rest for 10 minutes before cooking improves the texture.
  • Traditionally, waffles are served folded instead of stacked.
  • Leftover waffles can be refrigerated and gently reheated without losing softness.
