Ingredients
1 cup almond flour
½ cup oat flour* (see notes)
¼ cup vanilla plant protein powder (I used this)
¼ cup ground flax** (see notes)
1 tbsp matcha green tea powder
¼ tsp fine sea salt
½ cup cashew butter (or almond butter, avoid peanut butter)
¼ cup pure maple syrup
1 tbsp water
Instructions
Mix dry ingredients: In a medium mixing bowl, whisk together almond flour, oat flour, vanilla protein powder, ground flax, matcha, and salt.
Add wet ingredients: Add the cashew butter, maple syrup, and water. Use your hands to mix until everything is well combined. The dough should stick together and not be crumbly (if it’s too crumbly, add a little more water).
Form energy bites: Roll the dough into 18-20 bite-sized balls and place them on a tray or plate.
Chill: Store the energy bites in the refrigerator or freezer to firm up.
Notes
Oat flour: You can easily make your own oat flour by blending old-fashioned oats until they form a fine powder.
Ground flax: If you don’t have ground flax, you can substitute more almond flour, or use chia seeds.
Protein powder: If you don’t have vanilla plant protein powder, you can use another protein powder, but adjust the sweetness with more maple syrup if needed.
Matcha alternative: If you don’t have matcha, you can skip it and add mini chocolate chips for a different flavor—cookie dough style!
