Ingredients

1 lb (500 g) cod fillets, rinsed and patted dry

1¼ tbsp olive oil (extra virgin recommended)

1 tbsp freshly squeezed lemon juice

¼ tsp salt

Instructions

Preheat the oven to 400 °F (205 °C).

Arrange the cod fillets on a baking tray. Drizzle with olive oil, lemon juice, then season with salt and cayenne.

Bake for 10–12 minutes, depending on fillet thickness. The fish is done when opaque and flaky.

Garnish with chopped parsley and serve immediately.

Notes

Use fresh cod for best texture, or fully thawed frozen cod. Pat dry before seasoning to avoid excess moisture.
