Ingredients
For the Mini Pancakes:
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ¼ tsp salt
- ¾ cup milk
- 1 large egg
- 1 tbsp melted butter (plus more for cooking)
- ½ tsp vanilla extract
For the Kebabs:
- Fresh fruit (such as strawberries, bananas, blueberries, kiwi, or pineapple)
- Maple syrup or honey, for drizzling
- Wooden skewers or cocktail sticks
Instructions
- Make the Batter: In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, whisk milk, egg, butter, and vanilla. Combine wet and dry ingredients and stir until just mixed (small lumps are fine).
- Cook the Mini Pancakes: Heat a lightly greased nonstick pan or griddle over medium heat. Drop small spoonfuls (about 1 tablespoon each) of batter. Cook until bubbles form on top; flip and cook another 30–60 seconds until golden.
- Assemble the Kebabs: Thread mini pancakes and fruit pieces alternately onto skewers — e.g., pancake, strawberry, banana, blueberry, repeat.
- Serve: Arrange on a platter and drizzle with maple syrup, honey, or a dusting of powdered sugar.
