Cute, fluffy mini pancakes stacked on skewers with fresh fruit and a drizzle of syrup — a playful and delicious twist on breakfast! Perfect for brunch spreads, parties, or breakfast-on-the-go.

  • Total Time: 25 min
  • Yield: 6-8 kebabs

Ingredients

For the Mini Pancakes:

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup milk
  • 1 large egg
  • 1 tbsp melted butter (plus more for cooking)
  • ½ tsp vanilla extract

For the Kebabs:

  • Fresh fruit (such as strawberries, bananas, blueberries, kiwi, or pineapple)
  • Maple syrup or honey, for drizzling
  • Wooden skewers or cocktail sticks

Instructions

  1. Make the Batter: In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, whisk milk, egg, butter, and vanilla. Combine wet and dry ingredients and stir until just mixed (small lumps are fine).
  2. Cook the Mini Pancakes: Heat a lightly greased nonstick pan or griddle over medium heat. Drop small spoonfuls (about 1 tablespoon each) of batter. Cook until bubbles form on top; flip and cook another 30–60 seconds until golden.
  3. Assemble the Kebabs: Thread mini pancakes and fruit pieces alternately onto skewers — e.g., pancake, strawberry, banana, blueberry, repeat.
  4. Serve: Arrange on a platter and drizzle with maple syrup, honey, or a dusting of powdered sugar.

Notes

  • Make ahead: Store mini pancakes in the fridge and reheat before assembling.
  • Great for brunch buffets, kids’ snacks, or Mother’s Day breakfast.
  • Try Nutella, peanut butter, or yogurt dip for serving!
