A flavorful one-pan Middle Eastern chicken tray bake featuring bone-in, skin-on chicken thighs braised with warm spices, cherry tomatoes, and red onion for a tender and aromatic main dish.

  • Total Time: 1 hour
  • Yield: 4–6 servings

Ingredients

Chicken and Spices

  • lb bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp cinnamon
  • ½ tsp turmeric
  • Salt and black pepper to taste

Vegetables and Liquid

  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • ½ cup chicken broth

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
  2. Season Chicken: In a large bowl, toss the chicken thighs with olive oil, ground cumin, paprika, cinnamon, turmeric, salt, and black pepper until evenly coated with the spice mixture.
  3. Arrange Ingredients: Place the seasoned chicken thighs on a rimmed baking tray along with the sliced red onion and cherry tomatoes, evenly distributing the vegetables around the chicken.
  4. Add Broth: Pour the chicken broth around the chicken pieces on the tray to provide moisture for braising during baking.
  5. Initial Bake: Cover the baking tray loosely with aluminum foil and bake in the preheated oven for 30 minutes to allow the chicken to cook and the flavors to meld.
  6. Final Bake: Remove the foil and continue baking for an additional 20 minutes until the chicken skin is golden brown and the meat is tender and cooked through.

Notes

  • Serve with flatbread or couscous for a complete meal.
  • For added variation, include olives or chickpeas in the tray bake for extra flavor and texture.
