- 1 red onion, sliced
- 1 cup cherry tomatoes
- ½ cup chicken broth
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
- Season Chicken: In a large bowl, toss the chicken thighs with olive oil, ground cumin, paprika, cinnamon, turmeric, salt, and black pepper until evenly coated with the spice mixture.
- Arrange Ingredients: Place the seasoned chicken thighs on a rimmed baking tray along with the sliced red onion and cherry tomatoes, evenly distributing the vegetables around the chicken.
- Add Broth: Pour the chicken broth around the chicken pieces on the tray to provide moisture for braising during baking.
- Initial Bake: Cover the baking tray loosely with aluminum foil and bake in the preheated oven for 30 minutes to allow the chicken to cook and the flavors to meld.
- Final Bake: Remove the foil and continue baking for an additional 20 minutes until the chicken skin is golden brown and the meat is tender and cooked through.
