Rice and Broth
- 1½ cups uncooked rice

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Mix Ingredients: In a baking dish, combine the uncooked rice, chicken broth, olive oil, oregano, garlic powder, salt, and pepper. Stir these ingredients together to evenly distribute the seasonings and oil.
- Add Chicken and Vegetables: Stir in the cooked chicken pieces, cherry tomatoes, and sliced olives into the rice mixture, ensuring they are well incorporated.
- Bake Covered: Cover the baking dish with foil or a lid and bake in the preheated oven for 35 minutes, allowing the rice to cook thoroughly and absorb the flavors.
- Add Feta and Continue Baking: After 35 minutes, remove the cover, sprinkle the feta cheese evenly over the top, and bake uncovered for an additional 10 minutes to melt the cheese and finish cooking.
Notes
- You can substitute brown rice for uncooked rice, but add extra broth and increase the baking time accordingly to ensure it cooks fully.
- For added nutrition and color, incorporate fresh spinach into the dish before baking.
