Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook Ground Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until fully browned, breaking it apart. Drain any excess grease to keep the dish lean.
- Sauté Aromatics: Stir in diced onion and cook for 3–4 minutes until softened and translucent. Add minced garlic and cook for an additional 30 seconds to release its aroma.
- Add Zucchini and Seasonings: Mix in the sliced or diced zucchini, marinara sauce, Italian seasoning, salt, and black pepper. Simmer the mixture for about 5 minutes until the zucchini softens slightly but still holds its shape.
- Transfer to Baking Dish: Pour the zucchini and beef mixture into your prepared baking dish, spreading it evenly.
- Add Cheese Topping: Evenly sprinkle shredded mozzarella and cheddar (or Parmesan) cheese over the top of the casserole for a rich, melty finish.
- Bake: Place the dish in the preheated oven and bake uncovered for 25–30 minutes. Bake until the casserole is bubbly and the cheese on top is lightly golden.
- Garnish and Serve: Remove from oven, garnish with fresh parsley or basil if desired, and serve warm for a comforting, flavorful meal.
Notes
- Salt zucchini lightly and drain excess moisture if it appears watery to avoid a soggy casserole.
- Add red pepper flakes if you prefer a spicy kick.
- For a lighter version, substitute ground turkey instead of ground beef.
