Instructions

  1. Melt Butter: In a large pot, melt the butter over low heat carefully to avoid burning, stirring occasionally until fully melted.
  2. Add Marshmallows: Add the mini marshmallows to the melted butter and continuously stir until the marshmallows are completely melted and the mixture is smooth.
  3. Incorporate Vanilla: Remove the pot from heat and stir in the vanilla extract to add extra flavor, if using.
  4. Mix Cereal: Quickly add the crispy rice cereal to the marshmallow mixture and stir well until the cereal is evenly coated with the marshmallow butter mixture.
  5. Press Into Pan: Transfer the mixture into a greased or parchment-lined pan. Use a lightly greased spatula or hands to press the mixture firmly and evenly into the pan.
  6. Cool and Set: Allow the bars to cool and set at room temperature for about 30 minutes to firm up.
  7. Cut and Serve: Once set, cut the marshmallow bars into 12 squares and serve immediately or store for later enjoyment.
